Ingredients: pork, (shoulder, leg, loin, belly) Includes pork back fat, rusk(optional), iced cold water, Kerry sea salt, black pepper,(course), brown sugar, fennel seed(cracked), chilli(crushed). Air dried for 12 hours before packing.
